Za'atar is a delicious Middle-Eastern spice mix. The composition of the mix varies from region to region but most of the times contains thyme, sumac (mildly sour herb), sesame seeds and sea salt. Once you have discovered this herb mix there is no way back. There is a reason why the use it on nearly every dish in the Middle-East! For me, the mild sour taste of za'atar pairs perfectly with the savory but fresh tahini-mint dipping sauce. As sweet potatoes do not contain starch, as opposed to regular potatoes, they won't be very crisp. However, they make up for that with their taste!

Ingredients
  • For the sweet potato fries:
  • 1 medium sweet potato (250g)
  • 1 tablespoon za'atar
  • Pinch of salt and pepper
  • 2 tablespoons of olive oil
  • For the dipping sauce:
  • 1 tablespoon tahini
  • 3 tablespoons yogurt
  • Juice of 1/2 lime
  • 1/2 teaspoon cumin
  • 1/2 teaspoon cayenne pepper
  • Pinch of salt and pepper
  • 10 small mint leaves
Directions
  • Step 1 Preheat the oven on 180°C.
  • Step 2 Wash the sweet potatoes and cut them (with the skin still on) lenghtwise in the middle and cut them into quarters.
  • Step 3 Mix the sweet potatoes and with the olive oil, za’atar and salt and pepper until potatoes are evenly coated.
  • Step 4 Spread the sweet potatoes on a baking dish with baking paper and bake for approximately 30 minutes on 180°C.
  • Step 5 In the meantime prepare the dipping sauce by mixing the tahini together with the yogurt, lime juice, cumin, cayenne pepper and salt and pepper.
  • Step 6 Finely chop the mint leaves and mix under the dipping sauce. Keep some of the chopped mint separated to sprinkle over the sweet potatoe fries just before serving.
