Salad of shaved Brussels sprouts with apples and walnuts

For some people Brussels sprouts brings back horrible childhood memories, but not for me! I always loved them. However, you can do a lot more with them than just boiling and braising them. Even raw they are delicious and taste a bit like cabbage. In this salad I combine them with a simple vinaigrette of honey and mustard that combines very well with the apples and walnuts.
Ingredients
- 100g Brussels sprouts
- 50g celery
- 50g radishes:1/4 apple
- 40g walnuts
- 1 tablespoon hazelnut oil
- 1 tablespoon maple syrup or honey
- 1,5 tablespoon lemon juice
- 1 teaspoon grainy mustard
- Black pepper
- Black pepper
Directions
- Step 1 Combine the honey/maple syrup, lemon juice, mustard, and hazelnut oil in a bowl and mix until the mixture thickens a bit.
- Step 2 Finely shave the Brussels sprouts and radishes with a mandoline or cut them very thin with a knife.
- Step 3 Cut the celery and the apple in small cubes of 1/2 cm.
- Step 4 Crumble the nuts.
- Step 5 Combine the nuts (set some aside for garnish), the vegetables and the apple with the vinaigrette in a bowl and mix.
- Step 6 Transfer the salad to a small bowl, sprinkle with the remaining nuts and serve.
